Ingredients
- 3 apples, thinly sliced
- 5 oz arugula
- ¼ cup red onion, thinly sliced
- ½ cup figs, chopped
- ½ cup goat cheese crumbles
- 1 cup pecan halves
- 2 tablespoons maple syrup (for pecans)
- ½ cup olive oil
- 2 teaspoons maple syrup
- 1 teaspoon lemon juice
- 1½ teaspoons Dijon mustard
- ½ teaspoon black pepper
- 1 garlic clove, minced
- 3 tablespoons balsamic vinegar
- ¼–½ teaspoon sea salt, to taste
Instructions
- Preheat the oven to 350°F (175°C). Toss pecans with maple syrup and sea salt; spread on a parchment-lined baking sheet. Bake for 5-7 minutes until toasted; cool.
- In a bowl or jar, whisk together olive oil, maple syrup, lemon juice, Dijon mustard, garlic, balsamic vinegar, and season with salt and pepper.
- In a large bowl, combine arugula with sliced apples, figs, red onion, goat cheese, and cooled pecans.
