Apple Crisp Cheesecake is a delightful fusion of creamy cheesecake and warm apple crisp, making it the ultimate fall dessert.


Ingredients

  • 2 large apples (Granny Smith or Gala)
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350F (180C).
  2. Prepare a 9-inch springform pan by wrapping it in foil and greasing the inside.
  3. In a bowl, combine graham cracker crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the pan.
  4. For the apple filling, peel and slice apples; toss with brown sugar and cinnamon.
  5. In another bowl, mix cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until fully combined.
  6. Layer half of the cheesecake mixture over the crust, followed by the spiced apples and then the remaining cheesecake mixture.
  7. Top with oatmeal crumble made from flour, brown sugar, cinnamon, quick oats, and melted butter.
  8. Bake in a water bath for about 60 minutes or until set; cool gradually.
