  • 1 ½ cups finely diced Honeycrisp or Gala apples (about 2 medium)
  • For the glaze: 2 cups powdered sugar
  • ⅓ cup + 2 tbsp apple cider or juice

Instructions

  3. In a large bowl, mix melted butter and sugar until smooth. Add egg, vanilla extract, and applesauce; whisk until combined.
  4. Gently fold dry ingredients into wet mixture until just combined. Fold in diced apples carefully.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet.
  6. Bake for about 10 minutes until golden.
  7. While baking, whisk powdered sugar with apple cider to create a glaze.
