  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • 2 ounces cream cheese (softened)
  • ½ cup granulated sugar
  • 2 cups heavy cream
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Prepare the apple filling: Sauté diced apples with sugar, lemon juice, cinnamon, and butter until soft. Let cool.
  2. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. In one bowl, mix dry ingredients (flour, baking powder, spices). In another bowl, cream together butter and sugar; add eggs and vanilla.
  4. Combine wet and dry ingredients alternately with milk until just mixed.
  5. Fill muffin tins halfway with batter, add apple filling, then top with more batter until three-quarters full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Cool completely before frosting.
  7. For the topping: Whip cream cheese with sugar; gradually add heavy cream until soft peaks form.
