  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
  2. Grate the zucchini and set aside. Dice the apple and set aside.
  3. Combine flour, cinnamon, salt, baking powder, and baking soda in a bowl.
  4. In another bowl, mix eggs, vegetable oil (or applesauce), vanilla extract, white sugar, and brown sugar until blended.
  5. Add wet ingredients to dry ingredients; stir gently until just combined.
  6. Fold in grated zucchini, diced apple, and walnuts; let batter rest for 5 minutes.
  7. Divide batter between prepared pans and bake: mini loaves for 35-40 minutes; full-sized loaves for about 55 minutes.
  8. Cool in pans for about 20 minutes before transferring to a wire rack to cool completely.
