  • 2 lb potatoes (washed and peeled)
  • 3 large avocados
  • 1 small Persian or Kirby cucumber (chopped into small 1/4 inch cubes)
  • 2 tbsp finely chopped fresh cilantro
  • Juice of 1/2 lime
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot for 15-20 minutes until fork-tender. Drain and let cool.
  2. While cooling, slice avocados in half, remove pits, and cut into 1/2 inch cubes.
  3. Cut the cooled potatoes into similar-sized cubes.
  4. In a large mixing bowl, combine potatoes, avocados, cucumbers, and cilantro. Squeeze lime juice over the top and season with salt and pepper.
  5. Gently mix until the avocado is mostly mashed and coats the potatoes. Adjust seasoning if necessary.
