  • 1 tablespoon smoked paprika
  • 1/2 tablespoon EACH: chili powder, garlic powder, brown sugar
  • 1 teaspoon salt
  • 1/3 cup (79ml) Bourbon (can be omitted if you prefer)
  • 3/4 cup (200g) Ketchup
  • 2 tablespoons dark brown sugar (light ok too – or maple syrup)
  • 2 tablespoons apple cider vinegar
  • 3/4 tablespoon onion powder
  • 3/4 teaspoon garlic powder (or 1 minced garlic clove)
  • 3/4 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup diced fresh peaches (about 4 small peaches)

Instructions

  1. Preheat your oven to 300°F (149°C).
  2. In a bowl, mix together smoked paprika, chili powder, garlic powder, brown sugar, and salt to create the rub.
  3. Rinse and dry the ribs; remove silver skin for tenderness. Coat both sides of the ribs with the rub and wrap in aluminum foil.
  4. Bake for about 2 hours until tender.
  5. For the BBQ sauce, combine bourbon (if using), ketchup, brown sugar, apple cider vinegar, onion powder, garlic powder, Worcestershire sauce, Dijon mustard, and diced peaches in a saucepan; simmer for 15 minutes until thickened.
  6. Grill the ribs on medium-high heat for 4-6 minutes per side after baking, brushing generously with BBQ sauce.
