- 6–8 chicken drumsticks
- 3 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 and 1/2 teaspoons kosher salt (divided)
- 15–20 cranks fresh-ground black pepper
- 2 tablespoons butter
- 1/2 medium yellow onion (chopped)
- 3–4 cloves garlic (minced)
- 1 cup uncooked white rice
- 1 and 1/3 cups chicken broth (low-sodium preferred)
- 2/3 cup water
- 1 lemon (cut into wedges)
- Fresh parsley or thyme (optional garnish)
Instructions
- Preheat oven to 350°F.
- Mix olive oil, brown sugar, smoked paprika, thyme, oregano, garlic powder, salt, and pepper in a bowl. Coat chicken drumsticks with the mixture.
- Sauté onions in butter until soft; add minced garlic for an additional minute.
- Combine sautéed onions with uncooked rice in a baking dish and add remaining salt. Pour boiling chicken broth over the rice.
- Place seasoned drumsticks on top of rice with lemon wedges; cover with foil.
- Bake covered for 30 minutes, then remove foil and bake for another 20 minutes until chicken is cooked through.
