Description

Baked feta potatoes are a delightful and savory twist on a classic side dish that will elevate any meal. This recipe combines crispy roasted potatoes with creamy baked feta cheese, fragrant herbs, and a touch of sweetness from honey.


Ingredients

  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the large baking potatoes. Par-boil in water for 6-8 minutes, then drain and let steam dry.
  3. Combine the par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and red chili flakes in a baking dish.
  4. Roast the seasoned potatoes for about 30-40 minutes until golden brown.
  5. Add the feta cheese and squeezed lemon juice to the center of the dish and roast for an additional 15 minutes.
  6. Squeeze out softened garlic from its skins and mash it; mix with lemon juice and fresh basil into the roasted potatoes.
  7. Drizzle with honey before serving warm.
