- Hickory pellets for smoking

- 2 tablespoons avocado oil

- 4 slices cheese (Colby jack & provolone)
- Sourdough bread
- BBQ sauce
Instructions
- Apply mustard to the brisket and season generously with rub. Refrigerate for 1-2 hours.
- Smoke at 210°F using hickory pellets for 9–10 hours until it reaches 165°F; then wrap in butcher paper with apple cider vinegar and beef tallow, smoking until it reaches 204°F.
- Rest the brisket for 2–3 hours.
- Sauté diced onions in avocado oil and butter until caramelized.
- Assemble the melt with fried onions, brisket, BBQ sauce, cheese between slices of sourdough.
- Toast sandwiches in a cast iron skillet until golden brown.
