  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss them on a lined sheet pan with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  3. Add broccoli to the sheet pan, toss with more olive oil and salt, then place the chicken breasts on the pan brushed with 1/4 cup BBQ sauce. Bake for an additional 15-20 minutes until the chicken is cooked through.
  4. Shred the chicken using two forks on the pan, coat with remaining BBQ sauce, then serve in bowls with roasted vegetables.
