Ingredients
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
- 1 Tablespoon olive oil
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
Instructions
- Preheat your oven to 400°F.
- Peel and chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss them on a lined sheet pan with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder. Bake for 20 minutes.
- Add broccoli to the sheet pan, toss with more olive oil and salt, then place the chicken breasts on the pan brushed with 1/4 cup BBQ sauce. Bake for an additional 15-20 minutes until the chicken is cooked through.
- Shred the chicken using two forks on the pan, coat with remaining BBQ sauce, then serve in bowls with roasted vegetables.
