- 3 tablespoons olive oil
- 1½ cups chopped carrots
- 1 cup chopped celery
- 2 cups chopped yellow onion
- 3 tablespoons tomato paste
- 1½ tablespoons minced garlic
- 64 oz low-sodium chicken or beef broth
- 1 cup pearl barley
- Fresh herbs (rosemary, thyme, parsley)
- Seasoning (salt, black pepper)
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear seasoned beef in batches until golden brown; set aside.
- In the same pot, sauté carrots, celery, and onion until soft.
- Stir in tomato paste and garlic; cook for one minute.
- Return beef to the pot along with broth, soy sauce, Worcestershire sauce, and herbs.
- Simmer covered for 45–60 minutes until beef is tender.
- Add pearl barley; cover and simmer another 45–60 minutes until barley is cooked.
- Stir in fresh parsley before serving.
