  • 2 lbs chuck roast
  • 3 tablespoons olive oil
  • 1½ cups chopped carrots
  • 1 cup chopped celery
  • 2 cups chopped yellow onion
  • 3 tablespoons tomato paste
  • 1½ tablespoons minced garlic
  • 64 oz low-sodium chicken or beef broth
  • 1 cup pearl barley
  • Fresh herbs (rosemary, thyme, parsley)
  • Seasoning (salt, black pepper)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear seasoned beef in batches until golden brown; set aside.
  2. In the same pot, sauté carrots, celery, and onion until soft.
  3. Stir in tomato paste and garlic; cook for one minute.
  4. Return beef to the pot along with broth, soy sauce, Worcestershire sauce, and herbs.
  5. Simmer covered for 45–60 minutes until beef is tender.
  6. Add pearl barley; cover and simmer another 45–60 minutes until barley is cooked.
  7. Stir in fresh parsley before serving.
