- 2.5 kg / 5 lb standing rib roast (bone-in)
- 1 onion, quartered
- 1 head of garlic, halved
- 5 sprigs thyme
- 3 sprigs rosemary
- 150g unsalted butter, softened
- 5 garlic cloves, minced
- Fresh herbs (thyme, rosemary), salt, and black pepper
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix softened butter with minced garlic and chopped herbs along with salt and pepper.
- Pat the roast dry and rub the herb butter generously over it.
- Place onion and garlic in the roasting pan as a base for the roast.
- Add thyme and rosemary sprigs around the roast.
- Insert a meat thermometer into the thickest part of the roast and cook until desired doneness (about 120°F for rare).
