  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 3 cups blueberries (fresh or frozen)
  • 2 large eggs
  • Zest and juice of 2 lemons

Instructions

  2. Line an 8"x8" or 9"x9" baking pan with foil, leaving an overhang for easy removal.
  3. In a bowl, mix melted butter, sugar, lemon zest, and flour until combined for the crust. Press into the bottom of the prepared pan.
  4. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, juice, and flour.
  5. Fold in blueberries gently. Pour filling over the crust.
  6. Bake for 40-45 minutes until edges are golden and center jiggles slightly.
