  • 1 lb dried navy beans
  • ½ lb salt pork (or diced bacon/hock)
  • 2/3 cup molasses
  • ¼ cup brown sugar
  • 1 large yellow onion, diced
  • Kosher salt
  • Dijon mustard
  • black pepper

Instructions

  1. Soak the beans in cold water with 1 tbsp kosher salt overnight.
  2. Simmer the soaked beans in their soaking water for 30–45 minutes until tender. Drain and reserve liquid.
  3. Preheat oven to 250°F.
  4. Score the salt pork and sear it in a Dutch oven until golden brown. Place this at the bottom of your bean pot.
  5. Layer drained beans and diced onion around the pork.
  6. Mix molasses, brown sugar, mustard, salt, and pepper; pour over the beans along with reserved liquid.
  7. Cover and bake for 6–8 hours, stirring occasionally and adding hot water if needed.
