Ingredients
- 1 lb dried navy beans
- ½ lb salt pork (or diced bacon/hock)
- 2/3 cup molasses
- ¼ cup brown sugar
- 1 large yellow onion, diced
- Kosher salt
- Dijon mustard

Instructions
- Soak the beans in cold water with 1 tbsp kosher salt overnight.
- Simmer the soaked beans in their soaking water for 30–45 minutes until tender. Drain and reserve liquid.
- Preheat oven to 250°F.
- Score the salt pork and sear it in a Dutch oven until golden brown. Place this at the bottom of your bean pot.
- Layer drained beans and diced onion around the pork.
- Mix molasses, brown sugar, mustard, salt, and pepper; pour over the beans along with reserved liquid.
- Cover and bake for 6–8 hours, stirring occasionally and adding hot water if needed.
