- 1/2 pound ground breakfast sausage
- 6 large eggs (beaten)
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter (divided)
- 8 slices sourdough bread
Instructions
- In a non-stick skillet, cook and crumble the sausage until browned. Transfer to a bowl lined with paper towels.
- In the same skillet, melt 2 tablespoons of butter on medium heat. Add beaten eggs and scramble until cooked through.
- Combine cooked sausage and scrambled eggs in the bowl. Heat the skillet again.
- Butter one side of each slice of bread. Place one slice in the skillet, butter side down, and layer with cheese, egg mixture, more cheese, and another slice of buttered bread on top.
- Grill until golden brown on both sides, about 3-4 minutes per side.
- Serve immediately or cut in half for easier handling.
