  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste
  • 1 cup shredded spinach
  • ¼ cup heavy cream
  • 3 tbsp grated Parmesan cheese

Instructions

  1. Season chicken strips with Cajun seasoning and salt. In a large pan, heat olive oil and butter over medium heat, then cook the chicken until golden.
  2. Add diced onion, minced garlic, sun-dried tomatoes, and tomato paste. Cook until the onion softens.
  3. Stir in the orzo for one minute, then add chicken broth. Bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally.
  4. Once the orzo is nearly tender, stir in shredded spinach until wilted.
  5. Pour in heavy cream and sprinkle Parmesan cheese. Mix well, adjust seasoning if needed, and serve hot.
