- 2 sweet potatoes
- 1 avocado (cubed)
- 1 1/2 cups uncooked rice
- Black beans
- 2 tbsp Cajun seasoning
- Olive oil
- 1/3 cup tahini
- 1 tbsp garlic powder
- juice from 1 lemon
Instructions
- Rinse rice under cold water. Cook in a large pot with water according to package instructions (15-20 minutes).
- Preheat oven to 415°F. On a baking sheet lined with parchment paper, toss cubed sweet potatoes with olive oil, Cajun seasoning, salt, and pepper. Bake for about 20 minutes until tender.
- In a skillet, heat olive oil and sauté optional garlic and onions. Add black beans and heat through.
- Assemble bowls by layering rice, roasted sweet potatoes, black beans, and avocado cubes. Drizzle generously with tahini sauce.
