Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a large bowl, mix together melted butter, brown sugar, egg, and vanilla until combined. In another bowl, whisk flour, cinnamon, baking powder, and salt together. Gradually add dry ingredients to wet mixture and fold in shredded carrots.
- Pour batter into the prepared pan and smooth the top. Bake for about 40 minutes until a toothpick comes out clean.
- While baking, beat cream cheese until smooth; add sugar, egg yolk, and vanilla extract until creamy.
- Spread the cream cheese mixture over the hot bars and bake for an additional 10 minutes until set.
