Description

Cauliflower Shawarma Bowls are a nutritious and flavorful dish that brings the essence of Mediterranean cuisine to your table. Ingredients

  • 1 large head cauliflower, chopped into florets
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. curry powder
  • 2 tsp. paprika
  • 1 tsp. ground cumin
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup tahini
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. minced fresh garlic
  • 1/4 tsp. ground cumin
  • 1/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • Optional toppings: cucumber slices, cherry tomatoes

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine spices. Toss cauliflower with 2 Tbsp. olive oil and season with half the spice mix. In another bowl, toss chickpeas with remaining olive oil and spice mix.
  3. Spread cauliflower on one baking sheet and chickpeas on another. Roast for 30 minutes; shake chickpeas halfway through.
  4. While roasting, blend tahini sauce ingredients in a food processor until smooth.
  5. Assemble bowls with rice as a base, topped with roasted vegetables and tahini sauce.
