- 2 cups cooked quinoa
- 2 eggs
- 1 cup shredded cheddar cheese
- 1/2 cup grated carrot
- 1 1/2 cups chopped broccoli
- Optional: 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender or food processor, finely chop the broccoli and grated carrot.
- In a large bowl, mix the chopped veggies with cooked quinoa, eggs, shredded cheese, and salt until well combined.
- Grease mini muffin tins and fill each cup with the mixture, pressing down firmly.
- Bake for 15 to 20 minutes until lightly browned on top. Let cool for 5 minutes before serving.
