Ingredients
- 2 pounds ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Slap Ya Mama seasoning (or substitute with Cajun seasoning)
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon red pepper flakes
- 1 (1-ounce) packet taco seasoning mix
- 1/2 cup water
- 1 (4-ounce) can diced green chilies
- 1 (15-ounce) can nacho cheese sauce
- 1 (5.6-ounce) package Knorr® Mexican rice (or similar)
- 3 cups Colby jack cheese, shredded
- 1 (3.5-ounce) package Santa Fe-style tortilla strips
- 1 cup sour cream
- 10 large flour tortillas, burrito size
Instructions
- In a large skillet or cast iron pan over medium heat, combine ground beef, diced onions, Slap Ya Mama seasoning, black pepper, cumin, cayenne pepper, and red pepper flakes. Stir well.
- Cook until the beef is browned and onions are tender. Add minced garlic and diced green chilies; cook for an additional 2 minutes.
- Drain excess grease, return mixture to the pan, sprinkle with taco seasoning mix, add water and simmer on low heat for 5 minutes.
- Prepare the Knorr® Mexican rice according to package instructions and set aside.
- In a small saucepan, heat nacho cheese sauce over low heat until warm and smooth.
- Warm tortillas in the microwave or on a skillet and layer each tortilla with cooked beef mixture, nacho cheese sauce, cooked rice, shredded cheese, sour cream, and tortilla strips.
- Fold sides of tortilla inward then roll tightly from bottom to form a burrito.
- Grill burritos on a hot skillet or stovetop grill pan for 1-2 minutes per side until golden and lightly crisp.
- Serve warm and enjoy.
