  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and cook ground beef and onion until meat is browned and onion is translucent (8-10 minutes). Drain excess grease.
  2. Stir in garlic and taco seasoning; cook for 30 seconds until fragrant.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil. Stir in rice.
  4. Cover and reduce heat to low; cook for 15 minutes until rice absorbs liquid.
  5. Sprinkle cheese on top; cover and cook for another 5 minutes until melted.
  6. Serve warm with your favorite toppings.
