Ingredients
- 2 tbsp butter
- 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 2½ cups chicken broth
- 1¼ cups white long-grain rice
- 2 cups fresh broccoli florets
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large pot, melt butter and cook chicken until golden (if using fresh). Remove and set aside.
- In the same pot, combine chicken broth, olive oil, and rice; bring to a boil. Reduce heat, cover, and simmer for 6 minutes.
- Add broccoli; cover and cook an additional 9 minutes until rice is tender.
- Stir in cooked chicken, cream of chicken soup, milk, sour cream, and half of the cheddar cheese until well combined.
- Transfer to a greased casserole dish; top with remaining cheese and bake covered for 15 minutes.
- Mix crushed Ritz crackers with melted butter; sprinkle over casserole and bake uncovered for another 10 minutes until golden.
