  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups broccoli florets (fresh or frozen)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 2 tbsp butter

Instructions

  1. In a large pot over medium heat, melt butter and cook seasoned chicken until no longer pink. Dice into pieces.
  2. Add olive oil, chicken broth, rice, broccoli, cream of chicken soup, milk, sour cream, and 1 cup cheddar to the pot. Stir well.
  3. Transfer mixture to a greased baking dish, top with remaining cheddar and crushed crackers mixed with melted butter.
  4. Preheat oven to 350°F and bake for 30–35 minutes until bubbly and golden brown.
