  • 2 tbsp butter
  • 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups long-grain white rice (uncooked)
  • 2 cups fresh broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat oven to 350°F (175°C). Cut chicken into bite-sized pieces; season with salt, pepper, and Italian seasoning.
  2. In a large pot over medium heat, melt butter and cook chicken until golden brown (about 5 minutes). Set aside.
  3. In the same pot, add chicken broth, olive oil, and rice; bring to boil. Reduce heat, cover, and simmer for 6 minutes. Add broccoli; cover and cook for another 9 minutes.
  4. Combine cooked chicken, cream of chicken soup, milk, sour cream, half of the cheese in the pot; stir well.
  5. Transfer mixture to a greased casserole dish; top with remaining cheese and bake covered for 15 minutes.
  6. Mix melted butter with crushed crackers; add on top after removing foil. Bake uncovered for another 10 minutes until golden.
