Ingredients
- 2 tbsp butter
- 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 2½ cups chicken broth
- 1¼ cups long-grain white rice (uncooked)
- 2 cups fresh broccoli florets
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup crushed Ritz crackers
Instructions
- Preheat oven to 350°F (175°C). Cut chicken into bite-sized pieces; season with salt, pepper, and Italian seasoning.
- In a large pot over medium heat, melt butter and cook chicken until golden brown (about 5 minutes). Set aside.
- In the same pot, add chicken broth, olive oil, and rice; bring to boil. Reduce heat, cover, and simmer for 6 minutes. Add broccoli; cover and cook for another 9 minutes.
- Combine cooked chicken, cream of chicken soup, milk, sour cream, half of the cheese in the pot; stir well.
- Transfer mixture to a greased casserole dish; top with remaining cheese and bake covered for 15 minutes.
- Mix melted butter with crushed crackers; add on top after removing foil. Bake uncovered for another 10 minutes until golden.
