  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 3 boneless, skinless chicken breasts (cut into strips)
  • 1 medium red bell pepper (sliced)
  • 1 medium green bell pepper (sliced)
  • 2 large onions (sliced)
  • 2 tablespoons butter
  • 1 cup Tex-Mex cheese (or cheddar)
  • 8 tortillas

Instructions

  1. Season chicken strips with fajita seasoning.
  2. In a skillet, heat olive oil and cook chicken until no longer pink. Set aside.
  3. Sauté onions in the same skillet for 2 minutes, add bell peppers and remaining seasoning, cooking until tender.
  4. Return chicken to skillet; combine with vegetables.
  5. Assemble quesadillas: place tortilla in a skillet, add filling and cheese, fold or layer another tortilla on top.
  6. Cook each side until golden brown and cheese is melted.
  7. Serve hot with salsa and sour cream.
