  • 14.5 oz diced tomatoes (canned, undrained)
  • 16 oz elbow macaroni
  • 2 cups shredded cheddar cheese (divided)
  • 2 tbsp taco seasoning
  • ½ cup water

Instructions

  1. Cook elbow macaroni according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef with diced onion until no pink remains; drain excess fat.
  3. Stir in diced tomatoes, water, and taco seasoning; simmer for about 5 minutes.
  4. Combine cooked pasta with the meat mixture until well mixed.
  5. In a greased 13×9 baking dish, layer half of the pasta mixture, sprinkle with one cup of cheese, then top with remaining mixture.
  6. Cover with foil and bake at 350°F for 30 minutes. Remove foil, add remaining cheese on top, and bake uncovered for an additional 10 minutes.
