  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 cups heavy whipping cream
  • 8 oz semisweet chocolate
  • 3 tbsp milk
  • 2 tbsp powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla, mixing well. Fold in cocoa powder, flour, salt, and baking powder until just combined.
  3. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out mostly clean. Allow cooling completely.
  4. For the mousse, melt chopped chocolate with milk over low heat. In another bowl, whip cream with powdered sugar until stiff peaks form. Gently fold in melted chocolate until fully combined.
  5. Spread mousse over cooled brownies and refrigerate for at least 3 hours or until set.
  6. Cut into squares and serve chilled.
