  • 4 tbsp melted butter
  • 10 oz semi-sweet chocolate (chopped)
  • 16 oz cream cheese (softened)
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • 6 oz semi-sweet chocolate (for ganache)
  • Mini chocolate chips and chopped peanuts (for garnish)

Instructions

  1. Prepare your muffin tin or mini springform pans.
  2. Mix graham cracker crumbs with melted butter, press into the base of the cups, and chill.
  3. Melt chopped chocolate in a microwave-safe bowl.
  4. Blend softened cream cheese with powdered sugar and vanilla until smooth; add heavy cream and mix until thickened.
  5. Combine melted chocolate with two-thirds of the filling mixture; spread over the chilled crust.
  6. Mix remaining filling with peanut butter; layer on top of the chocolate layer.
  7. Make ganache by melting additional chocolate with heavy cream; pour over cheesecakes.
  8. Garnish with chopped peanuts and mini chocolate chips before refrigerating.
