  • 1/2 cup unsweetened cocoa powder
  • 2 tablespoons flour
  • 1/2 cup low-fat milk
  • 1/2 cup water
  • 4 egg whites
  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly spray ramekins with cooking spray and dust with granulated sugar if desired.
  3. In a mixing bowl, whisk together powdered sugar, cocoa powder, and flour until smooth.
  4. In another bowl, combine low-fat milk, water, and egg yolks; mix well.
  5. Gradually add wet mixture to dry ingredients until fully combined.
  6. Beat egg whites with cream of tartar until soft peaks form; gradually add remaining sugar until stiff peaks form.
  7. Gently fold one-third of the egg whites into the chocolate mixture, then fold in the remaining whites carefully.
  8. Pour batter into prepared ramekins and bake for about 20 minutes or until puffed and set.
  9. Dust with powdered sugar before serving and enjoy immediately.
