  • 5.2 oz dry noodles (your choice)
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic (minced)
  • 1/2 small shallot or red onion
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup oil (olive oil recommended)
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce (to taste)
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. In a heatproof bowl, mix cilantro, garlic, shallot, curry powder, sugar, and chili powder.
  3. Heat oil in the same pot over medium heat until hot (check by adding a piece of garlic).
  4. Pour the hot oil over the cilantro mixture and stir well.
  5. Mix in mushroom oyster sauce, dark soy sauce, and lime juice until combined.
  6. Toss cooked noodles in the sauce until evenly coated.
  7. Serve hot, optionally garnished with chili oil for extra spice.
