  • ½ cup Greek yogurt
  • 2 tablespoons lime juice (from 1 whole lime)
  • Pinch of salt
  • 8 small (6-inch) corn or flour tortillas
  • 1 avocado, sliced
  • Extra lime wedges, for serving
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Pat shrimp dry and season with salt, pepper, and spices; toss to coat.
  2. Heat olive oil in a skillet over medium-high heat; add shrimp in a single layer and cook for about 3 minutes until opaque.
  3. Lower heat and add butter, lime zest, lime juice, and honey; toss until shrimp are coated and simmer for 2-3 minutes.
