  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 2 cups shredded cabbage
  • ½ cup shredded carrots
  • 2 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey

Instructions

  1. In a bowl, whisk cilantro, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Add shrimp and toss to coat. Refrigerate for at least 15 minutes.
  2. In a separate bowl, combine cabbage, carrots, and cilantro. Mix mayonnaise, yogurt, lime juice, vinegar, honey, salt, and pepper in another bowl; pour over cabbage mixture and toss well.
  3. Heat a non-stick skillet over medium-high heat. Cook marinated shrimp for about 2-3 minutes per side until pink.
  4. Warm tortillas in a skillet for about 30 seconds on each side.
  5. Assemble tacos by placing shrimp on tortillas and topping with creamy slaw.
