- 8 small corn tortillas
- 2 cups shredded cabbage
- ½ cup shredded carrots
- 2 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
Instructions
- In a bowl, whisk cilantro, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Add shrimp and toss to coat. Refrigerate for at least 15 minutes.
- In a separate bowl, combine cabbage, carrots, and cilantro. Mix mayonnaise, yogurt, lime juice, vinegar, honey, salt, and pepper in another bowl; pour over cabbage mixture and toss well.
- Heat a non-stick skillet over medium-high heat. Cook marinated shrimp for about 2-3 minutes per side until pink.
