  • 1 pound salmon fillets
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper, sliced
  • ½ cup chopped cilantro
  • 2 carrots, cut into strips
  • 1 russet potato, sliced (optional)
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • ¾ cup water (adjust as needed)
  • Sweet paprika
  • Hot paprika
  • Salt
  • Cumin
  • Turmeric

Instructions

  1. Prepare all vegetables: slice bell pepper and peppers, cut carrots and potato into strips, and halve garlic cloves.
  2. Heat olive oil in a large sauté pan over medium heat. Add vegetables and sauté for 2–3 minutes.
  3. Stir in sweet paprika, salt, cumin, turmeric, and tomato paste; cook for another 2–3 minutes until fragrant.
  4. Add half of the cilantro and water; stir well. Cover and cook for 12–15 minutes until veggies are tender.
  5. Season salmon fillets with salt; gently place them into the pan to coat with sauce. Cook on low flame for 20–25 minutes, basting with sauce halfway through.
  6. Garnish with lemon slices before serving.
