- 1 pound salmon fillets
- ⅓ cup olive oil
- 1 red bell pepper, sliced
- 1 serrano pepper, sliced
- ½ cup chopped cilantro
- 2 carrots, cut into strips
- 1 russet potato, sliced (optional)
- 6 garlic cloves, halved
- 1 tablespoon tomato paste
- ¾ cup water (adjust as needed)
- Sweet paprika
- Hot paprika
- Salt
- Cumin
- Turmeric
Instructions
- Prepare all vegetables: slice bell pepper and peppers, cut carrots and potato into strips, and halve garlic cloves.
- Heat olive oil in a large sauté pan over medium heat. Add vegetables and sauté for 2–3 minutes.
- Stir in sweet paprika, salt, cumin, turmeric, and tomato paste; cook for another 2–3 minutes until fragrant.
- Add half of the cilantro and water; stir well. Cover and cook for 12–15 minutes until veggies are tender.
- Season salmon fillets with salt; gently place them into the pan to coat with sauce. Cook on low flame for 20–25 minutes, basting with sauce halfway through.
