  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 16 slices Swiss cheese
  • ½ lb ham, thinly sliced
  • Peanut oil or vegetable oil, for frying
  • 1 cup all-purpose flour
  • 4 eggs, beaten
  • 2 cups panko bread crumbs
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • ¼ cup Dijon mustard
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder evenly across both sides.
  2. Place one chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound it to about ½ inch thick.
  3. Remove plastic wrap from one flattened chicken breast.
  4. Layer 2 slices of Swiss cheese and 2 slices of ham on top of the chicken.
  5. Add another layer of Swiss cheese and ham before rolling it tightly.
  6. Wrap each roll in plastic wrap and twist the ends to secure. Refrigerate for 30 minutes.
  7. Preheat a deep pan with about 2 inches of oil at 325°F (170°C).
  8. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  9. Dredge each roll first in flour, then egg wash, followed by breadcrumbs until fully coated.
  10. Fry each roll for about 5 minutes per side until golden brown.
  11. If not cooked through, transfer them on a wire rack over a baking sheet and finish baking in a preheated oven at 325°F until done.
  12. In a saucepan over medium heat, melt butter and sauté minced garlic until soft.
  13. Whisk in flour and cook for about 1 minute until combined.
  14. Gradually add milk while whisking continuously until thickened; bring to simmer.
  15. Stir in Dijon mustard and Parmesan cheese along with salt and pepper. Remove from heat.
  16. Slice each chicken roll and drizzle generously with creamy Dijon sauce. Enjoy alongside fresh vegetables or mashed potatoes.
