  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • Black pepper, to taste
  • ¼ teaspoon thyme
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown on both sides. Remove from skillet.
  2. In a saucepan, bring chicken broth and salt to boil. Add rice and simmer until tender.
  3. In the same skillet, melt butter and whisk in flour; cook briefly before gradually adding milk and broth to create a smooth sauce. Stir in spices and cheeses until melted.
  4. Return chicken to the skillet, spoon sauce over it, cover, and simmer until cooked through.
  5. Serve over rice garnished with fresh parsley.
