  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon thyme
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a large skillet with olive oil for about 4–5 minutes per side until golden brown. Set aside.
  2. In a medium saucepan, boil chicken broth with salt and add rice. Reduce heat and simmer until tender (15–18 minutes). Fluff with a fork.
  3. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour until golden brown; gradually add milk and broth while whisking continuously until smooth. Stir in garlic powder, thyme, cheddar cheese, and Parmesan; cook until thickened.
  4. Return the seared chicken to the skillet with the sauce. Cover and simmer on low heat for about 10 minutes.
  5. Serve over rice and garnish with fresh parsley.
