Description

Creamy Smothered Chicken and Rice is the ultimate comfort food, perfect for busy weeknights or special family gatherings. This delightful dish features tender, seasoned chicken breasts smothered in a rich and creamy sauce, served over fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Olive oil
  • Unsalted butter
  • All-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon thyme
  • Salt and black pepper, to taste

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet and sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  2. In a saucepan, bring chicken broth and salt to a boil. Add rice, reduce heat to low, cover and simmer for 15-18 minutes until tender. Fluff with a fork.
  3. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour until golden; gradually add milk and broth while whisking to avoid lumps. Add garlic powder, thyme, cheddar cheese, and Parmesan; cook until thickened.
  4. Return chicken to the skillet; spoon sauce over it and simmer on low heat for 10 minutes.
  5. Serve over rice with fresh parsley garnish.
