  • ¼ cup diced sundried tomatoes
  • 3 minced garlic cloves
  • ¼ cup flour
  • 6 to 8 cups chicken broth
  • 6 oz pasta (small shells recommended)
  • 1 cup heavy cream
  • ½ to 1 cup grated Parmesan cheese
  • 2.5 to 3 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning; cook until browned (4-5 minutes).
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until veggies are translucent (3-4 minutes).
  3. Sprinkle flour into the mixture; mix well. If using tomato paste, add it now.
  4. Gradually whisk in chicken broth while stirring continuously; deglaze the pot.
  5. Bring to a boil; add pasta and another teaspoon of Italian seasoning. Cover and simmer on low for about 20 minutes until chicken is cooked through and pasta is al dente.
  6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional 5 minutes.
  7. Taste and adjust seasoning before serving.
