  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • ¼ cup duck fat (or substitute)
  • 1 head garlic
  • 1 tablespoon finely chopped fresh rosemary
  • ¼ teaspoon black pepper
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. Preheat oven to 450°F and place a roasting pan inside.
  2. Parboil peeled and chunked potatoes in salted water with baking soda until fork-tender (about 25 minutes). Drain and let dry.
  3. Melt duck fat in the hot roasting pan. Rough up potato edges by shaking in a colander, then add to the pan.
  4. Season with salt, pepper, and nestle garlic head cut-side down. Roast for 55–60 minutes, tossing every 20 minutes until golden brown.
  5. Mash roasted garlic cloves with rosemary and olive oil, mix back into potatoes, and return to oven for another 5 minutes.
