Ingredients
- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- ¼ cup duck fat (or substitute)
- 1 head garlic
- 1 tablespoon finely chopped fresh rosemary
- ¼ teaspoon black pepper
- 1 tablespoon extra-virgin olive oil
Instructions
- Preheat oven to 450°F and place a roasting pan inside.
- Parboil peeled and chunked potatoes in salted water with baking soda until fork-tender (about 25 minutes). Drain and let dry.
- Melt duck fat in the hot roasting pan. Rough up potato edges by shaking in a colander, then add to the pan.
- Season with salt, pepper, and nestle garlic head cut-side down. Roast for 55–60 minutes, tossing every 20 minutes until golden brown.
- Mash roasted garlic cloves with rosemary and olive oil, mix back into potatoes, and return to oven for another 5 minutes.
