  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • Corn tortillas
  • Oil for frying

Instructions

  1. Soak the dried chilies in hot water for about 15 minutes until softened, then blend with onion, garlic, and tomatoes until smooth.
  2. Place the beef chuck roast in the crock pot and pour the chili mixture over it.
  3. Add beef broth, apple cider vinegar, oregano, cumin, bay leaves, salt, and pepper to the pot.
  4. Cook on low for 8-10 hours until the beef is tender.
  5. Shred the beef directly in the crock pot and mix well with the sauce.
  6. Heat oil in a skillet and fry corn tortillas after dipping them in the broth fat layer until crispy.
  7. Assemble tacos by filling tortillas with shredded beef mixture and fry again if desired.
