- 12 oz applewood smoked bacon (chopped)
- 1 sweet onion (chopped)
- 3 cloves garlic (minced)
- 2 cups chicken stock
- 1 cup bourbon (optional)
- 3/4 cup BBQ sauce
- 1/4 cup ketchup
- 2 Tablespoons molasses
- 3 Tablespoons pure maple syrup
- 1/2 cup brown sugar
- 1/2 teaspoon smoked paprika
- 1/8 teaspoon ground cumin
Instructions
- Soak navy beans overnight in a large pot of water. Drain and rinse them the next day.
- In a skillet, brown chopped bacon until crisp. Remove and drain excess grease.
- Sauté onions in the same skillet until caramelized; add minced garlic and cook for an additional 2 minutes.
- In a large pot, combine soaked beans with chicken stock, bourbon (if using), BBQ sauce, ketchup, molasses, maple syrup, brown sugar, smoked paprika, and cumin; bring to a boil.
- Pour the mixture into the crockpot along with cooked bacon and sautéed onions and garlic.
- Cook on high for 5–6 hours or low for 10–12 hours, stirring occasionally.
- Let sit on warm for up to an hour to thicken before serving.
