  • 1/4 cup unsalted butter (divided)
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 large egg yolks
  • Salt and black pepper to taste

Instructions

  1. Peel and chop the potatoes into even pieces. Boil in salted water until fork-tender (15-20 minutes).
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Drain the potatoes and return to low heat to evaporate moisture. Mash until smooth using a ricer or masher.
  4. Mix in melted butter, warm cream, Parmesan cheese, salt, pepper, and egg yolks until fully combined.
  5. Pipe the mixture onto the baking sheet in decorative mounds.
  6. Brush with remaining melted butter and bake for 15-20 minutes until golden brown.
