  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and ground cinnamon. Add melted butter and mix until well combined. Press the mixture firmly into the bottom of a greased 9×13-inch baking pan.
  3. In another bowl, beat the cream cheese until smooth using an electric mixer. Gradually add sugar and flour; mix well. Add sour cream, vanilla extract, and ground cinnamon; blend until smooth. Add eggs one at a time, mixing on low speed after each addition until just combined.
  4. Pour the filling over the crust in the baking pan and bake for about 50 minutes or until set but slightly jiggly in the center. Allow it to cool completely at room temperature before refrigerating for at least 4 hours.
  5. In a saucepan over medium heat, combine chopped apples with brown sugar, cinnamon, nutmeg, and lemon juice. Cook until apples are tender but not mushy.
  6. Once chilled, top with caramel sauce and then spoon on the apple mixture.
  7. In a mixing bowl, beat cold heavy whipping cream with powdered sugar until soft peaks form. Add vanilla extract and ground cinnamon; mix until combined.
