  • 4 tablespoons butter
  • ¾ cup diced carrots
  • ¾ cup diced celery
  • ¾ cup diced onion
  • 4 cups diced potatoes
  • 3 cups chicken broth
  • 1 to 2 cups cubed Velveeta cheese
  • 1½ cups whole milk
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook ground beef until browned (6-8 minutes). Drain fat and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté carrots, celery, onion, basil, and parsley until tender (about 10 minutes).
  3. Add potatoes and chicken broth; bring to a boil. Reduce heat and simmer until potatoes are tender (10-12 minutes).
  4. In another pan, melt remaining butter, stir in flour, and cook until bubbling (3-5 minutes). Mix into the soup and bring back to a boil for thickening.
  5. Lower heat; stir in cheese, milk, salt, and pepper until melted thoroughly. Remove from heat.
  6. Serve hot with optional toppings like onion rings or green onions.
