Ingredients

  • 2 ½ pounds russet or Yukon gold potatoes
  • 3 tablespoons butter
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme
  • 3 cups cheddar cheese, grated

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Peel and slice the potatoes into thin rounds.
  3. In a saucepan, melt butter over medium heat; add onions and cook until softened. Stir in garlic and thyme.
  4. Whisk in flour, then gradually add heavy cream while stirring until smooth. Season with salt, pepper, and cayenne if desired. Stir in 2 cups of cheese until melted.
  5. Layer half of the potatoes in the baking dish, pour half of the sauce over them, sprinkle with some cheese, then repeat layers.
  6. Cover with foil and bake for 40 minutes; remove foil and bake an additional 20 minutes until golden.
