  • 1 lb ground beef
  • ½ cup minced onion
  • 2 tablespoons minced garlic
  • 28 oz crushed tomatoes
  • 4 cups low-sodium beef broth
  • 2 cups reginetti pasta (or broken lasagna noodles)
  • Optional: Ricotta cheese, Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced onion for 3-4 minutes until softened, then add minced garlic for another minute.
  2. Brown the ground beef in the pot, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in crushed tomatoes along with spices (bay leaf, basil, parsley, oregano, black pepper) and mix well.
  4. Add beef broth and water; bring to a simmer.
  5. Once boiling, add pasta and cook for about 10-12 minutes until al dente.
  6. Remove bay leaf before serving. Ladle into bowls and top with optional ricotta and Parmesan cheese.
