  • 1 medium yellow onion (diced)
  • 2 tsp minced garlic
  • 1/4 cup taco seasoning
  • 1 can fire-roasted diced tomatoes (14.5 oz)
  • 1 can green chilis (4 oz)
  • 1 can black beans (15 oz)
  • 18 corn tortillas
  • 6 cups shredded cheese
  • Fresh toppings: diced tomato, green onions, sour cream

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef and onion until browned; add garlic and sauté for an additional minute.
  3. Stir in taco seasoning and water; simmer for a few minutes.
  4. Mix in diced tomatoes, green chilis, and black beans; heat through.
  5. Layer six corn tortillas in the baking dish, followed by one-third of the meat mixture and two cups of cheese. Repeat twice more, finishing with cheese.
  6. Cover with aluminum foil and bake for 30–40 minutes until bubbly.
