  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces red gelatin powder
  • 3 ounces blue gelatin powder
  • 1 cup butter (for frosting)
  • 5 cups confectioners' sugar
  • 12 tablespoons milk
  • Red and blue icing gel or food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake pan with liners.
  2. In a bowl, cream butter and sugar until fluffy. Beat in eggs one at a time and stir in vanilla.
  3. In another bowl, whisk flour, baking powder, and salt; gradually mix into wet ingredients alternating with milk.
  4. Divide batter into three bowls. Color one red and another blue using gelatin powders.
  5. Layer each color in cupcake liners: red on the bottom, white in the middle, blue on top.
  6. Bake for about 18 minutes until a toothpick comes out clean. Let cool.
  7. Prepare frosting by beating together butter, confectioners' sugar, vanilla extract, and milk until creamy.
  8. Frost cooled cupcakes and decorate with colored icing gel.
